Grilled chicken pasta salad
This is the perfect chicken pasta salad to bring to a picknick. The secret is putting the tomato juice in the salad dressing.
2 grilled chicken breast fillets (if you don't have chicken breasts that are already grilled, just fry pieces of chicken in barbecue glaze)
0.6 cups dry pasta (like fussilli, farfalle or penne)
10 cherry tomatoes
2 tbsp kidney beans
Coarsely grated parmesan
Herbs suitable for salad (thyme, basil, oregano etc.)
1 garlic clove or garlic powder
0.2 cups tomato juice
Combine oil, vinegar (2 parts of oil, 1 part of vinegar), herbs, mayonnaise, 1 crushed garlic clove or garlic powder, tomato juice.
Cut the chicken fillets in cubes (and fry them, add barbecue glaze, salt and pepper if necessary). Put in a bowl, add pasta, beans and vegetables. Add the salad dressing, stir and sprinkle grated parmesan on top.
