Oven Baked Falun Sausage with Tomatoes and Cheese

Falun sausage is a common ingredient in Swedish everyday food. It has a mild taste and is therefore quite versatile. Kids love it as well. It can be found on the Swedish shelf at for example Kroger.

2 servings

1 lb Falun sausage
0.5 cups grated cheese

Tomato filling:

½ onion
1 lb chopped tomatoes
1 tbsp tomato pureé
Black pepper
Garlic powder

Preheat your oven to 380°F. Chop and fry onion until it's starting to get a transparent look. Add chopped tomatoes, salt, pepper, a pinch of sugar and put in the tomato purée. Then add oregano and garlic powder and allow to cook until most of the water is gone.

Make a horizontal slit about 2/3 into the sausage and gently widen. Put the sausage in an oven tin and fill it with the tomato sauce. Allow some of the sauce to end up around the sausage. Put the grated cheese on top of the tomato sauce.

Put in the oven for about 30 minutes. Serve with rice or mashed potatoes and a salad.
