Pasta salad with pork loin
Pasta salad with pork loin, vegetables and a simple mustard salad dressing. Incredibly easy to make and great for picknicks.
0.7 lbs pork loin
1.5 cups uncooked pasta (preferably fussilli, farfalle, penne or similar)
0.5 cups creme fraiche or sour cream for cooking
1 tsp Dijon mustard (regular mustard works as well)
1 tbsp olive oil
½ tbsp vinegar
Salad herb mix (e.g. basil, thyme, oregano)
Garlic powder or 1 crushed garlic clove
Cook the pasta and let cool. Cut the pork loin, cucumber and tomato into cubes. Remove some of the wet area of the tomatoes so that the salad doesn't get sloshy.
Make the salad dressing by combining oil, vinegar, salt, pepper, herbs and garlic in a small bowl. Stir. Add sour cream and stir some more.
Put the dressing in a bigger bowl together with pork loin, pasta and vegetables or serve the dressing on the side.
