Peppers filled with ground beef and cheese
These filled peppers look beautiful and are just as delicious as they look.
3 big peppers
0.7 lbs ground beef
1 clove of garlic
Taco spice mix
1 tbsp tomato purée
1 cup sour cream for cooking or creme fraiche
3 tbsp sweet corn
0.5 cup grated cheese
Preheat your oven to 380°F.
Fry chopped onion, garlic and ground beef in a frying pan. After a while when the beef is starting to look ready, add the taco spice mix. Then pour in sour cream and tomato purée, stir and allow to simmer for a while.
In the meantime, cut the peppers in half. Remove the seeds but leave the stems. Immerse the pepper halves into boiling water and allow to boil for about 5 minutes or until they begin to look soft.
Spread the pepper halves on a tin. Add some corn to the ground beef mix. Spoon the ground beef mix into the peppers, sprinkle some cheese on top and then finally, sprinkle some paprika powder on top of the cheese.
Put in the oven for about 15-20 minutes.
