This potato omelette is rather spicy but you could of course use whatever spices you like. Be inspired!
8 big potatoes
Oregano or basil
Cut the potatoes in slices and fry them along with chopped onion in a big frying pan using lots of butter. Add salt, pepper, chili powder, paprika powder and herbs.
Break the eggs in a bowl along with some salt and pepper and beat them. Cut the zucchini in slices.
As soon as the potatoes are beginning to look ready, add the egg mixture and the zucchini slices. Keep frying the omelette until the eggs set. Be careful not to burn the omelette underneath, make sure it's not stuck to the pan. Use a broad spatula.
Serve with fresh vegetables.
