Vegetarian Spinach Lasagna





This is an easy recipe for vegetarian spinach lasagna that actually has a slight Mexican touch.



2-3 servings

Ingredients:

4 oz lasagna noodles
Tomato sauce
Spinach sauce (see below)
pepper
Grated cheese or mozzarella
8 oz quark curd
Taco spice mix
Milk

Spinach sauce:

Thaw about 5 oz of creamed spinach (preferably) in a sauce pan until it becomes a sauce. Add quark and taco spice mix (for directions see package).


Directions:

Begin by spreading some tomato sauce in the bottom of an oven dish. Cover sauce with lasagna noodles. Cover noodles with tomato sauce, then spinach sauce and cheese. Place another layer of noodles and repeat the procedure. The top layer should be sauce, cheese and slices of pepper. Pour some milk around the edges of the lasagna so that it won't get too dry. Bake in oven for about 30 minutes, 380F.
